The Fact is: The scent of Basmati comes from a natural compound called 2-Acetyl-1-pyrroline. In whole grains, this scent is locked deep inside. In Mogra rice, the broken edges allow this aroma to escape and infuse into your food more deeply. However, the mass market often mixes Mogra with "Non-Basmati" broken grains that have no smell.
