To get the best "Paper" and "Thick" varieties, we source our paddy from the Ujjain and Indore regions of Madhya Pradesh, famous for producing the best Poha in India. The soil and climate here produce a grain that is naturally sweet and stays white without the need for chemical bleaching. We select only the "Indori Grade" paddy, known for its superior ability to flatten without shattering.
